Marble stains and etching: what comes out and what does not
Short answer. There are two different kinds of damage on marble, and almost everybody calls them by the same name. The dull mark left by lemon or wine is not dirt: it is etching, the acid has eaten away the polish. No cleaner will ever remove it, because there is nothing to remove — it is restored by re-polishing. The dark patch from oil or coffee is the opposite: something that has gone into the stone, and it is drawn back out with a poultice. Using the remedy for one on the other is the most common way to make things worse.
Telling them apart in thirty seconds
Stand to one side of the surface and look at it against the light, with the reflection coming back towards you.
If the area is lighter and duller than the marble around it, only shows from a certain angle and disappears when you look straight down at it, that is etching: the surface has lost its gloss at that spot. Run a finger over it and the stone is still smooth, but light no longer bounces off it the same way.
If the area is darker than the marble around it and shows from any angle, in any light, that is a stain: a substance has been absorbed below the surface. The polish there is often perfectly intact.
You can have both at once: a drop of salad dressing left overnight stains and etches. In that case you treat the stain first and restore the polish afterwards, never the other way round.
The dull mark: what causes it and how it comes out
Marble, travertine, onyx and limestone are carbonate rocks: they react with acids, and the reaction eats away a few microns of polished surface. The Natural Stone Institute says plainly that products containing lemon, vinegar or other acids may dull or etch calcareous stones.
The list of everyday culprits is longer than people expect: lemon and citrus, vinegar, wine, tomato, some cheeses, fizzy drinks. And above all the household products: limescale removers, which are acidic by definition, and general bathroom cleaners. The Natural Stone Institute notes that even some commercial rust removers contain traces of hydrofluoric acid, which on marble is devastating. Scouring powders and creams do something different again: they do not etch, they scratch.
The thing to understand is this: an etch mark is not cleaned, it is refinished. A light mark can be brought back with a marble polishing powder worked by hand over the area. A large or deep one is a restorer’s job, bringing the whole surface back to the same level: polish only the mark and you get a shiny mark, just as visible as the dull one was.
The stain: the poultice, and how it is done
An absorbed stain is not scrubbed off: it is drawn out. The method is the poultice, and it is always the same method — only the chemical inside it changes.
You make a paste from a white absorbent material and the appropriate chemical, about the consistency of peanut butter, and spread it over the stain roughly half a centimetre thick, overlapping the edges a little. Cover it with plastic sealed at the edges and leave it to work for 24 to 48 hours. It is not the chemical that does the work: it is the drying. As the poultice dries it pulls what is in the stone back out into itself. That is why it has to be left alone, and why it often has to be repeated two or three times.
The chemical depends on the stain. From the Natural Stone Institute’s consumer guidance:
- Oil, grease, butter, cosmetics — absorbent with baking soda and water, or with mineral spirits.
- Organic stains: coffee, tea, wine, fruit — 12% hydrogen peroxide with a few drops of ammonia, or acetone.
- Rust and metal marks — diatomaceous earth with a proprietary rust remover. These are the most stubborn and sometimes permanent.
- Mould, algae, biological stains — diluted ammonia, or bleach, or hydrogen peroxide.
- Ink — bleach or hydrogen peroxide on light stones.
Never mix bleach and ammonia: the combination produces a toxic gas. It is the one warning on this page that the manual itself prints in capitals.
One point almost nobody adds: some of these chemicals can themselves dull the surface. The stain comes out and an etch mark stays behind. That is normal, and it is why the treatment always ends with restoring the polish. Knowing it in advance makes it the last step of the procedure rather than an unpleasant surprise.
What a sealer actually does, and what it does not
Here is the most widespread misunderstanding of all, and it is worth being blunt about.
The products everyone calls sealers are impregnators: they do not close the stone under a film, they go into the pores and make them repellent. The Natural Stone Institute puts it without hedging: sealing does not make stone stain proof, it makes it more stain resistant. The practical difference is the time you have to react — on a treated stone a drop of wine sits on the surface for a few minutes instead of going straight down.
And above all: an impregnator does not protect against etching. It has nothing to do with it. Etching is a chemical attack on the surface, not absorption into the pores; the acid attacks the marble exactly as it did before. Anyone selling you a treatment on the promise that afterwards you can cut lemons on it is describing something that does not exist.
The finish decides how forgiving the marble is
This choice is made at design stage, and it is the most effective one of all.
A polished surface is a mirror: any loss of gloss reads immediately, and on a heavily used top the marks accumulate. A honed or satin surface takes exactly the same chemical attack — it does not resist better, and nobody should tell you it does — but with no reflection to lose, the mark is barely visible. A bush-hammered or split face is more forgiving still.
In practice: on a dining table used every day, with children or with guests, a honed finish will save you years of small irritations. On a hall console or a bathroom top, where the gloss is precisely the effect you want, the risk is far lower and worth taking.
The habits that actually matter
- Coasters under every glass, and particularly under spirits and citrus.
- A board: you do not cut on marble, and you do not put acidic food straight onto it.
- Clean with a neutral cleaner, a proper stone soap, or a few drops of washing-up liquid in warm water. Then rinse and dry: water left to evaporate on its own leaves a limescale mark.
- No scouring powders, no limescale removers, no all-purpose surface sprays.
- If something acidic spills, blot it at once. Do not wipe: wiping spreads it.
How we work

If a table is going to be the table your family eats at, we say so before you order that a mirror polish in a kitchen will annoy you, and we show you the same stone honed. And if a piece does get marked after some years, it can be brought back: marble is one of the few materials that returns to new by removing a few microns of surface. A laminate top, once it is marked, is marked.
